Woo Hoo. Today is almost over and I am about to drive myself to the airport. I am going out of town today for the weekend, for one of my best friends from college’s wedding in Costa Rica! So, today was a day of errands, and cleaning out my fridge!
Surprise, surprise….today started with lemon water! It was quickly followed with a mug of Guayaki Yerba Mate. I used to drink a full french press of this every day! It is a great coffee substitute that is full of antioxidants and gives you that pep without the crash. I like to make it from loose leaves, but it is available in bags and in many flavors, too.
I was feeling hungry this morning and a had a lot of produce to use up before my trip. So, I made up a smoothie in my vitamix using coconut water, spinach, kale, celery, romaine, 1/2 a green apple, 1/2 a frozen banana, the juice of 1/2 a lemon, a little hemp seed oil, and a couple teaspoons of chia seeds.
Sometimes, when I make shakes like this I add a little stevia to make it sweeter, but using the coconut water must have done the trick because I didn’t need any today. It was perfect.
I topped it with a little bee pollen for extra protein and vitamins. I love bee pollen. It is like candy to me!
After filling up my glass, there was still a good size serving left in the blender. Which was perfect since I was planning on being out running errands for the day.
I poured the rest in my togo shake cup and put it in a little cooler bag in the back of my Vespa.
A few hours later, already starting to get drained from not finding what I was looking for my supplemental shake was the perfect pick me up. It was also easy to drink as I walked from store to store.
Sometimes, I find myself not stopping for food because I just want to get everything taken care of first. Taking a shake with me is the best answer for this.
I had also packed a salad with me in the cooler bag just in case I was out even longer. I ended up not making time to stop and eat it, but as soon as I got home I pulled it out and devoured it. So, it was still greatly convenient that it was all made up and ready to go.
The salad was arugula, quinoa, avocado, hemp seeds, pumpkin seeds, nori, olive oil, and a little smoked sea salt.
For dinner, I made a veggie red curry with brown rice noodles. I simmered one can of coconut milk with 4 teaspoons of red curry paste, 2 teaspoons of coconut sugar, and some red chili powder. Then, I added onion and sweet potato and let that cook for 10 minutes. Next, I added broccoli and let it cook a little more. Meanwhile, I was boiling water for the rice noodles. After about 3 minutes with the broccoli, I added the leaves of a head of kale.
I cooked the rice noodles, drain them and add it in with the curry. This is one of my favorite things to make with whatever vegetables I happen to have around. I like mine pretty spicy and flavorful, so I use more curry paste then they reccommend and I add the chili powder and sometimes jalepeno if I have it.
After dinner, I did my final pack and tidied up my house. I still had quite a fridgeful of produce. So, I pulled it all out and got juicing!
It made so much juice that I filled up a large mason jar and a half. I started to make the juice at 10pm and I have been sucking it down as I type this. I leave for the airport at midnight and it is safe to say that I am going to be high on green juice! HA! There could definitely be worse things. Maybe it will actually help me sleep? I have never drank this much juice so late before.
The juice is a mix of kale, spinach, celery, romaine, 1/2 a green apple, 1 lemon, a big hunk of ginger, and a grapefruit. I have about 3 more big slirps to go then to brush my teeth and get out of here!
