I just stumbled upon this when doing a google search for a fresh and healthy breakfast in NYC. Unfortunately, they are not open on the weekends, so I will not be going there for breakfast tomorrow….but I will be making these cookies sometime in the near future!

Raw Chocolate Chip Cookies
Yield 22–24
- 2 1/2 cups fine cashew flour
- 1 3/4 cups oat flour
- 1/2 cup raw cacao powder
- 1/4 cup water
- 3/4 cup maple syrup
- 1 tablespoon vanilla extract
- 1 1/2 teaspoons sea salt
- 1 cup + a few extra Raw Chocolate Chips
Mix all ingredients except chocolate chips in a medium size bowl by
hand. Stir in chocolate chips. Form into 3-inch cookies and press a
few extra chocolate chips into the top of each cookie. Dehydrate on
screens overnight at 118 degrees.
This is Matthew Kenny’s recipe from EveryDay Raw and should not be published without his permission. It is a great recipe…but he published this in his book that is copyrighted and unless he gives permission to post, it’s just not kosher.

and I link to it and give him credit. I did not copy it from the
