Let’s be honest.

Sometimes I just feel too lazy to make a green smoothie or a kale salad.  I just want to run out the door and be on my way or I just want to stuff the first thing that I see in my face.

I don’t even want to take 3 minutes to throw a bunch of things in the blender.  I don’t even want to take 3 minutes to massage some oil and sea salt into a bowl of kale.  Even though, I know it will make me feel so great!

So to solve this little snafu and to ease my days, I often times make at least double of what I am going to eat for that meal.  Green shakes, kale salads and quinoa are the best for this.

You can make a big ole blender full of goodness and bottle it up for the next day or even later that day.  I am constantly saving my own life by making extras and having it on hand.

Today, happened to be one of those days when I got busy working, working, working and then was overcome with hunger and tada there was a big ole jar yummy green goodness sitting in my fridge waiting for me.  LIFE SAVER!

The same goes with massaged kale salads.  They keep great for a couple of days in the fridge.  I don’t know how many times I get home or finally make it to my kitchen and really the last thing I want is kale salad.

But, when I open the refrigerator door and see it staring at me I go for it every time.  Often times I have saved quinoa as well so I will mix them together, maybe top it off with a little olive oil or avocado, whatever I feel like.  Then, what do you know?  I am then completely and utterly satisfied and fulfilled.  Even the many times when I really wanted something junkier.  My saved kale salad saves my day.

So, when you take time to make yourself something good, make it a double!  It really doesn’t take any extra time and trust me you will really enjoy being your own life saver.
