You guys, it’s fall! I love summer. I love the beach. I love the warmth. I love a nice glass of chilled rose’ on a hot summer evening. But…I really love fall, too. I love getting cozy in a sweater and boots and warming up with a blanket. I also love the shift in foods. I have already made two soups in the last week from my Nourish Cookbook !
For me fall feels like an opportunity to start fresh, and also to really dive in to my dreams and passions. The weather shifts, the leaves change colors and start to fall, new seasons of my favorite TV shows start… It feels like the perfect time to create new routines and throw out what isn’t working.

Ever since I came across the Your Joyologist blog, i’ve become in love with the concept and idea. I enjoy opening emails, reading inspirational quotes, and passing it onto others. I am a full time working mother to a terrible two year old, and he is my inspiration. I hope to teach him to take care of this environment and live by healthy means. I want to get cooking in the kitchen with him. When I read “undiet” diet, I was ecstatic. I myself, weight nearly 100 lbs, during pregnancy it was difficult to gain and maintain weight. I sure hope I can benefit from this meal prep course and get to cooking with my son. *fingers crossed*

My biggest problem with cooking is buying spur of the moment produce and telling myself that I will surely use it throughout the week. Usually the produce I’ve purchased ends up in the trash because I either forget about it or since I did not have a recipe in mind while shopping I leave out ingredients that I will need. I am excited about UnDiet because the recipes and preparation are thoughtfully planned. “You are what you eat” so the saying goes and I want to see that manifest in my daily life.
