The other day in Greenville, SC our runner (local production driver who runs our errands in each city) bought me an over abundance of produce for my Joy N Vibe kitchen. Amongst that abundance was a big bag of fresh green beans. Hmmm. What to do with these? I already had my toaster oven over full roasting asparagus and baking some portobello mushrooms. Do I want to steam then in the steam tray of my rice cooker, while the quinoa is cooking? Or how about raw? My original plan was to just put a few raw beans in each salad, but he brought we back way more than I expected….
I chose to stick with the beans in the raw, but fancy them up a bit.
Fresh Green Beans with the ends off
1 tbsp of sesame oil
sea salt
sprinklings of garlic flavored Gomasio (if you don’t have access to Gomasio you can use garlic powder and sesame seeds)
Toss it all together and since I could, I put mine on dehydrator sheets and in the dehydrator for a couple of hours until dinner was served. This helped to lock in the flavor more. I left the beans that didn’t make it onto the abundant dinner plates in the dehydrator the rest of the night, until it was time to pack up my kitchen road case and put it on the semi to be driven to the next city. Then the beans were a nice little snack! I am going to make them again, when I have more time to dehydrate them and I know these are going to become a regular snack, salad add in for me!
Yum! These sounds great. My Excalibur dehydrator is on the way – yay! Now can you tell me what kind of juicer you use? I saw it in the video but have never seen one that looked like that before. Thanks 🙂
At home I have an Omega 8005, but for tour I just got a Hurom slow juicer and it is amazing. Highly recommend it. Both are great for greens which I mostly do. Happy juicer hunting!

Also, if you have a good recipe for ice cream using young Thai coconuts, could you please post it? Or email me? I made one with cashews and some coconut, but would love a nut free version that is mostly coconut.
