I want her to love vegetables again and I know some day she will eat them eagerly on her own. I don’t force her to eat them but I do keep putting them on her plate and asking her try them. I definitely don’t want to create stress or pressure around eating. But…I also don’t want to her to be missing out on all the nutrients! Soooo…I have taken to working some veggies into dishes and things she will eat. She does love fruit and she loves smoothies so that is an easy way for me to throw some greens in or even sweet potatoes!
I also made up an easy little dip recipe that she can dip chips into or I can use as a spread for a quesadilla. Those are two things she loves. Chips and tortillas, and I am so freaking grateful that Siete exists because I feel GREAT about giving these to Zia! They have a few different varieties of tortillas made from almond flour, chia, coconut flour and cassava flour and they taste amazing and actually act like a flour tortilla they aren’t rubbery or bland like pretty much all brown rice tortillas I have tried are. AND their chips are INSANE, eat the whole bag in one sitting every time, insane. The chips are a base of cassava flour, coconut flour and chia and come in plain, lime and nacho flavors.
So…I already feel great when we have Siete on our plates and using them as a vehicle for my creative hidden veggie meals helps a ton! Also, I highly recommend this dip spread myself, so if you don’t have kids please make it for you! I use it as a dip for roasted veggies myself and the chips and the quesadillas because honestly I spend way to many years NOT eating quesadillas because I felt they weren’t healthy enough! Not anymore!
To make the super simple dip/spread I used:
1 cup steamed carrots
1 cup raw sunflower seeds
3/4 – 1 cup purified water
1 teaspoon sea salt
And to a little more flavor you can add:
1 garlic clove
1/4 cup nutritional yeast
Add all ingredients to a blender and blend until smooth! If you like it thinner slowly add more water to your desired consistency and of course alter it to fit your tastes! You can add herbs as well for even more flavor, but I was keeping it simple here and beige, ha! The first few times I made it I only did water, carrots, sunflower seeds and salt and it was still great!
For a dip you are ready to go! For quesadillas all I did was heat a pan with a little coconut oil, spread some dip on one tortilla, put the other on top and then heat on both sides for a little bit until I saw a little change in color/bubbling. It is super subtle and doesn’t take long.
And then excitedly serve your kiddos and or yourself and hope for the best! HA! The good news is even if your kid turns their nose up at this, it is healthy and delicious so you can enjoy it yourself.
And seriously, keep an eye out for Siete! I am seeing the chips pop up and loads more stores lately (and they sell them online at Thrive Market) but the tortillas are a bit harder to find…but you can order online and they keep well in the freezer if you buy in bulk!
