I love my kale. Especially, my massaged kale salads. Lately, I find myself making this new conconction and savoring every bit of it…I even wipe the edges of the bowl clean, not with my sponge…
I start with
1 head of kale chopped and placed in a good sized bowl
I then pour on
1 TBLS sesame oil (you can use olive or flax, I just happen to have a lot of sesame oil right now)
a good dose of Himalyian sea salt
1/2 of 1 lemon juice
I massage the kale good until I see that is all all coated an begun to break down. I then add
2 tsp of dulse
2 tsp of nutritional yeast
2 TBLS of hemp seeds
2 cloves of chopped garlic
and mix it all up good. I then taste and see if I want to add a little more of any of the above. I add and taste and when I am set I add
1/2 an avocado.
Yum! This is my new fave! Somedays I like to add a side of cooked quinoa and or some fresh farmer’s market saurkraut, too. And some days I make some baked squash to go along with my meal!
When I do make the squash, I use that to sop up the sides of the bowl….when I don’t, I use my fingers..

I too have a kale addiction. In fact today, I was a little bummed because I brought the wrong bag of kale with me to work and there wasn’t enough to make my massaged salad. No problem! There were some left over chopped carrots in the fridge and some avacado from yesterday’s nori wrap. Delish!! I’ll be trying out the kale chips tonight with some nutritional yeast and some himalyian salt. Can’t wait!!
I’m not kidding about the addiction. I eat this salad 2x a day now. Is there a support group for us? :O)
