1 1/2 cup soaked cashews (soaked at least 4-6 hours, I soaked overnight)
1 cup chopped red pepper (most of one whole pepper)
Juice of 2 lemons
1 tsp salt
2 cloves of garlic
3 TBLS nutritional yeast
1/2 cup of fresh water
2 heads of cleaned kale ripped into pieces.
Blend all the above ingredients (except kale) in your blender or food processor. Then coat kale with your cheezy sauce. Spread evenly on dehydrator sheets and dehydrate away. If you are like me, you will be “checking” on them all day, tasting them as the harden. Keep them in for at least 6 hours at 115 degrees.
I warn you, they probably won’t last in your house very long. So if you plan to bring them to a party, or give them to someone, make yourself extra!
These sound delish. I need to get a good dehydrator. What is a good brand? Exalibur?
Excalibur is the best!
The Universe is sooooo friendly. I just got back from Whole Foods with Nutritional Yeast and my new Excalibur is sitting on the counter. It’s all good. Thanks for posting your recipe!

What brand of nutritional yeast do you use? We have a limited selection where I live so I was planning on ordering some! And if you like cheesy kale chips, check out this recipe from another blog I read Vegan Creamed Kale! http://hungryhungryhippie.com/ YUMMY!
Thanks for posting! You’re the best!
I am not completely brand specific but Bragg’s does make nutritional yeast. So if I was ordering online I’d choose them. Enjoy!!
